Lola’s Food truck is an extension of the restaurant that opened in 2009. It offers a mobile solution to feeding New Ulm and surrounding areas – offering the classic-with-a-twist cuisine.
The ever-changing food truck menu is a capsule of the bistro’s offerings — creative takes on American and homey classics, served with a sense of humor (intense aromas, thick textures, bold flavors, cliché spellings in the restaurant’s own words). Recent eclectic options included bahn-mi tacos and muffaletta.
“With the truck we can run a five-item menu and change it as much as we want,” owner Lacey Lueth said. “It allows seasonal items, more creativity and the venue and people are always changing,”
The truck resides most nights at the Hub in Mankato but travels to private events as well.
“I get really excited about making new things, and pulling off huge events successfully,” Lacey said. “Winning the nomination makes us feel like the years we’ve put into this project—people appreciate having it as an option for a small business to support!”
